Crock Pot Arrived!

My crock pot has arrived to save me from this dysfunctional, paleo unfriendly kitchen! For those of you who don't know. I am living in a sublet for the last two months of my stay in philly. Luck of the draw - I ended up with this measly kitchen. For the first week I was afraid to even approach the thing. I know I'm so spoiled.


Anyway, I've become pretty resourceful. Sweet potatoes in the microwave, cans of sardines, baked a bunch of egg muffins for the week and made a tub full of guac. This crock pot will, however, allow me to start making more protein! I can't wait to dig into these: 30 Nights of Paleo Crock Pot Meals

Recipe: Crockpot TexMex Carnitas

Ingredients

  • 2-3 lbs pork (butt/shoulder works best)
  • 1/4 c. diced yellow onions
  • 1/4 c. diced green chiles (canned is okay)
  • 1 tsp. fresh minced garlic
  • 1 1/4 c. (1 small can) diced tomatoes
  • 1 tbsp cumin
  • 2 tsp onion powder
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp. salt
  • 1 tbsp agave/honey
  • 2 tsp. lime juice
  • 2 tbsp. orange juice
  • 1/2 c. barbecue sauce

Instructions

  1. Place all ingredients in a crockpot on low 6-8 hours.
  2. About an hour prior to eating (if possible), shred the pork with a fork and stir.
  3. Serve in lettuce bowls/wraps.

On another note I'm doing this for me
Here is a thread from our CFCC Body Composition Group. It's a very active group with tons of links, concerns ... kind of like a support group haha. But I love it.


so there are 14 responses to this already. I voiced that I've heard similar comments from family members. I agree with the author of this post - They're annoying at most.
